D.O.P. cheeses, simple, and genuine in their tastes and characteristics |

Among the many cheeses available in the national market, Bra, Raschera and the Toma Piemontese are amongst the few that have the D.O.P. the denomination of origin. This signifies that the milk used must have particular characteristics of quality and quantity, coming from a limited region of selected pastures; but the D.O.P. also certifies the production methods and the aging process are traditional and must follow precise rules. The cheeses are also appreciated for these reasons. It is exactly for this rigor in selecting the type of milk and the methods used in working it that these cheeses, Raschera, Bra, and Toma Piemontese have their distinctive taste, constant and inimitable. They are all uniform, soft and sweet and with small holes and sweet aromas. The D.O. is recognizable by the presence of its registration mark either on the label or fire branded directly on the cheese. The characteristic square form of the Raschera and the round forms of the others weigh between 6 and 7kg. Their goodness is synonymous with a healthy balanced diet resulting from their nutritional properties and their genuineness. |
