A typical cheese of this zone, the Pagliettina is a tuma cheese with a white hay colored crust, made with cows, goats and sheep milk. In the past, particularly in the valleys of the Monregalese, where our business is located, the dairy farmers and herders combined their milk to create this cheese, small, aromatic and flavorful, aged for just a few days, it is harder around the edges and creamier in the middle. We produce the Pagliettina today as it was made in the past. It is available in cases of 12 pieces weighing 200 grams each; every piece is hand wrapped and tied with natural twine.
