| Cevrin
is made entirely of whole, raw goats milk that comes together as a result
of the delicate action of milk enzymes and many hours of maturation. Very
fine and soft in consistency, it is spread able, with the very pleasant
and distinct flavor of goats milk. This cheese is combined with a variety
of ingredients and comes in the following flavors; red grape vines, aromatic
mountain herbs, sesame seed and mint, and juniper ashes. Each wooden case
contains 6 Cevrin that weigh 100 grams each. They are all packaged in a
controlled atmosphere to allow for longer conservation, 35 to 40 days at
4°c after which a white crust forms and the flavors intensify but in
no way compromises the quality of the cheese. Some people actually wait
for the crust to form before they consume the cheese as this simply intensifies
the flavors. |

A soft and creamy cheese: |

Made with cows and goats milk, it has a full flavor and smells like the herbs and flowers that we feed our animals. Rutulin is very nutritious and versatile and can be eaten as part of a cheese platter or with bread or polenta, vegetable tarts, grains and pasta dishes. The cheese is best stored at 4°c but is better eaten at room temperature. It comes in its natural flavor, rolled in fresh herbs or lightly aged with a white crust. |
